Bug: unable to send mail if 'organization name' is blank

Since in many cases we use the 'Site/Organization Name' from site configuration as the 'name' for outbound mail, it will prevent expMail/SwiftMailer from sending.
Not sure of best fix at this point...easy future proof fix is to make that setting 'required', but that won't fix existing installations...may have to add a test for valid entry with a fallback to the email address?
